I decided I couldn’t let Brian eat Lucky Charms for dinner again tonight. It was so hot last night I didn’t mind.
Tonight, knowing I didn’t have any fresh veggies in the house, I stopped by our corner produce shop on the way home. Looking at all the veggies and fruit I still had no idea what I wanted to cook. So I got some red and yellow peppers (on sale at 2 pounds for $1.50), some cabbage, lemons, vidalia onions, and corn on the cob.
I chopped stuff up in big chunks. Then I tossed the cabbage, some tofu, and the corn on the cob cut into 2″-3″ lengths in the pressure cooker with some fake chicken broth, tumeric, paprika (the spicy kind from the IndoPak store), cumin, kosher salt and fresh ground pepper in the pressure cooker.
Then I carmelized the big chunks of onions and peppers in a little coconut oil on the stove. When both were done I took out the corn (which was now VERY yellow) and stirred the carmelized onions and peppers into the cabbage stuff. Then I served it in bowls with the corn on top.
It was very good.
